Piles-o-Pickles….cottage reflections

When Nate and I headed to the cottage we stopped at a farm vegitable stand on our way. Well, not really on the way but first. Cargills is way off the beat and path and is not your typical roadside veggie stand. It is where the locals go. We got some fresh sweet corn at $2.50 a dozen, fresh beets (a 5 quart pail), green beans, new potatoes, and come cucumbers. The cucumbers were my downfall. I could have bought them for 5 for a dollar which is a fine deal.

But…Cargills usually has a table with ‘day old’ or ugly vegies (like ‘b’ produce – not pretty but fine for canning). They had a box of cucs…maybe 20 lbs….for $2. Who can pass up a bargain like that?

We ate a lot of cucs at the point and then i went and bought a bushel more when i was packing to come home. And i learned how to can pickles. A lot of pickles. Barb also learned at the cottage so she could deal with my $2 box. We canned pickles in slices, sandwich slices, quarters, and whole. Crunchy Dill Pickles. We also did some w/o canning them, ‘refrigerator style’. These will keep refrigerated for months. Between us we canned 55 quarts. Check out these photos:
